Mary Beth's Menu - Pumpkin Bars

Pumpkin Bars

  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups flour
  • 2 cups sugar
  • 15 0z. can pure pumpkin
  • 1/2 teaspoon nutmeg
  • 2 teaspoon cinnamon
  • 1/2 teaspoon ginger (optional)
  • 1/2 teaspoon cloves (optional)
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Pre heat oven to 350 degrees.

Mix together eggs, oil, sugar and pumpkin. Add all remaining ingredients mixing well either by hand or with an electric mixer.

Pour into a greased and floured 12" x 8" pan (large cookie sheet with sides) and bake 25-35 minutes at 350 degrees.

Allow to cool.

Enjoy plain or top with cream cheese frosting. I generally make homemade, but was short on time this week and used pre-made.

Girlfriend's Weekend Fun at the Desomnd

QVC recently hosted a "girl's" get-a-way featuring a trip to Hershey and many things chocolate. I would have loved to spend the entire weekend with the women, but unfortunately, my schedule did not allow. However, I was able to join them on a Saturday night at the Desmond hotel where we shared dinner, great conversation and games.

My friend and social coordinator, Erika, met me in the parking lot at QVC after I got off the air that day and followed me to the hotel. We arrived in time to mingle with the guests a little prior to sitting down for dinner. We met so many lovely women who were excited to meet us and tell us all about their weekends so far.

They were spoiled "sweetly" during their trip to Hershey as they enjoyed a chocolate massage, shopping and as one woman put it, "ate way more chocolate than I ever imagined I could."

I was impressed and in awe of how far some of the women traveled to be a part of our weekend ....... Maryland, Illinois, North Carolina, etc. and most of them said they have been shopping with us "since the beginning".

Friday was Flashback Friday and these two women won the contest for the best throw-back picture from the 80's. : )

 Our decadent chocolate fudge cake dessert ..... no further explanation needed!!

A chef from the Desmond explained the different types of chocolate as we sampled the treats. It was quite interesting and fun!

We played a game, I forget the name but here's how it went. Each person from the dinner table picked a number and there were the same number of wrapped gift boxes as there were people. Number one picked a box and revealed their piece of jewelry, then number two had the choice to either "steal" number one's piece of jewelry or open a new box and so on and so on. The fun part in this game was whenever you heard the bell ring, whose ever turn it was at that moment, they HAD to steal. It was so funny! Everyone was so cordial and nice UNTIL the bell rang. We played along and stole and swapped and laughed a lot. Ultimately everyone ended up with a beautiful piece, which were kindly donated by Judith Ripka , Michael Dawkins and Honora .

I was lucky enough to win these beauties and you know how much I love blue and turquoise.

Thank you to Michelle, Ashley and Kelly for planning, organizing and making the weekend so much fun. These three are incredibly talented and if you've never been to visit QVC for a live studio audience or a weekend get-a-way ... what are you waiting for?!?

Mary Beth's Menu - Cheesy Broccoli Ham Bake

Cheesy Broccoli Ham Bake

  • 10 0z. chopped frozen broccoli (thawed)
  • 1 cup cooked rice
  • 10 oz. can cheddar cheese soup
  • 10-14 oz. diced ham of your choice (I used ham steaks this time)
  • 1/2 cup sour cream
  • 1/2 cup bread crumbs (seasoned for added flavor)
  • 1/3 cup butter, melted

Pre heat oven to 350 degrees.

Place all ingredients (except, the bread crumbs and butter) in a casserole dish and stir well.

Melt butter and stir in bread crumbs. Sprinkle evenly over casserole.

Cover baking dish.

Bake for 35 minutes.

Remove cover and bake 10 - 15 additional minutes until topping is golden brown.

Serve with your favorite sides. Serves 4.

Perricone Packs a Punch

It was about 6 years ago when my skin really started to take a change for the worse. I was entering pre-menopause and could feel my skin was much drier than it was in the past and was really beginning to show signs of aging. I noticed I was starting to look older when I saw my reflection in the mirror and I wanted to do something about it to try to slow down the aging process just a bit.

I ran into Dana Bledsoe at QVC one day and even though I had presented Dr. Perricone products before with her, I had not tried them personally. I told her my sob story, and right away she said, "You need to try Dr. Perricone's neuropeptide facial cream. You'll see dramatic results!"

So, I ordered it and got started right away. Within only one short month, I could already see the difference in the firmness and smoothness of my skin. My face was radiant even without makeup and I was thrilled!

Next, I ordered some of Dr. Perricone's other neuropeptide items. I quickly learned and understood how important it was to incorporate neuropeptides into my skincare routine to help kick up my results a notch. Yes, those types of products are more expensive, but they do the job and last a long time. So to me, it is worth it!

The cleansers and moisturizers from his line are very good, too, but if you are going to spend the money on Dr. Perricone products, I would mostly recommend the facial cream, the neck cream, the acyl-glutathione serums and the deep wrinkle serum.Dr. Perricone is such a genius and a dedicated researcher that I am confident that whenever he comes out with a new product, I know it will be fantastic and researched as much as possible!

Our Today's Special Value is all about the Plasma products . I'm excited to see them in the super sizes and they are all about focusing on exfoliation and cell turnover, as well as moisturizing. I know it's pricey, but in my opinion, my face is worth it. I'm not 20 anymore. : )

If you're like me and at the point where you just need extra treatment with definite results, then what do you have to lose? Try something from Dr. Perricone's line of skincare and see if it makes a difference! Give it time though...nothing that has lasting effects happens overnight. Have patience, trust and get started!

Mary Beth's Menu - Just give "peas" a chance!

I like most vegetables, but I am always looking for different ways to serve them other than steamed. The following recipe is an easy way to jazz up peas and might just better your chances at getting your children to try them. My friend, Erika doesn't even like peas, but she said she likes my "baked frozen peas".

Baked Frozen Peas

  • 18 - 20 oz. frozen peas
  • 1 can of cream of celery soup
  • 1/2 cup bread crumbs
  • 4 tablespoons melted butter

Butter a casserole pan. Separate frozen peas and place in pan and mix in soup. In a separate mixing bowl, stir together bread crumbs and melted butter. Sprinkle evenly over peas and bake uncovered at 400 degrees for 45 minutes.

Mary Beth's Menu - Halloween Edition

Make-up

  • 2 teaspoons shortening
  • 5 teaspoons cornstarch
  • 1 teaspoon lour
  • 3 to 4 drops glycerin food coloring

Mix ingredients together to form a paste and then add coloring. Apply to face and body and enjoy the Halloween festivities.

And here is my easy tuna noodle casserole recipe, so you and your family can enjoy a quick and hearty dinner prior to trick-or-treating:

Tuna Noodle Casserole

  • 8 oz. wide egg noodles
  • 2 cans tuna fish, well drained
  • 1 can cream of mushroom soup
  • 3/4 milk
  • 4 oz. can sliced mushrooms (chopped small) - optional
  • 1-1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic powder (optional)
  • 1/4 cup dry bread crumbs
  • 8 oz. grated cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 12 oz. sour cream
  • 2 tablespoons melted butter
  • 8 oz. frozen peas (thawed) (optional)

If using frozen peas in this recipe, place in a bowl on the counter to defrost first.

Cook noodles as directed on the package. Drain noodles in colander and return to the pan. Stir in sour cream, milk, cream of mushroom soup, mushrooms, salt, pepper and garlic powder.

Then, stir in tuna fish and peas and transfer to an ungreased, two-quart baking dish.

Stir together the parmesan cheese, cheddar cheese and bread crumbs in a separate bowl. Melt the butter and stir it into the cheese and breadcrumbs.

Sprinkle evenly over top of the casserole.

Bake uncovered at 350 degrees for 35-40 minutes or until bubbly.

Mary Beth's Menu - Coconut Cake

Coconut Cake

  • 1 box yellow cake mix
  • 1 small package vanilla instant pudding mix
  • 1-1/3 cup of water
  • 4 eggs
  • 1/4 vegetable oil
  • 2 cups flaked coconut
  • 1 cup chopped nuts, of your choice (I generally use walnuts)


Blend cake mix, pudding mix, water, eggs and vegetable oil in a large mixing bowl on medium speed for about 4 minutes.
Hand stir in coconut and nuts.
Pour into 2 or 3 greased and floured 9-inch layer pans (depending on if you want a two or a three layered cake. I made two this time.
Bake at 350 degrees for 35 minutes. Remove from oven and allow the cake to cool in the pans for at least 15 minutes then remove and completely cool on a rack or a counter top.

Coconut Cream Cheese Frosting

  • 4 Tablespoons butter
  • 2 cups flaked coconut
  • 8 oz. cream cheese, softened
  • 2 teaspoon milk
  • 3-1/2 cups powdered sugar
  • 1/2 teaspoon vanilla

Melt the butter in pan. Add coconut; stirring constantly over low heat until golden brown. Spread coconut on absorbent paper to cool. Stir together 2 Tablespoons of the butter with the cream cheese. Add milk and powdered sugar alternately, beating well. Add vanilla; stir in 1-3/4 cups of the coconut. Frost cake and sprinkle with remaining coconut.

Mary Beth's Menu - Faith's Meatloaf

My sister, Faith, is a caterer and this is her recipe for meatloaf. It is incredibly moist and flavorful and of course, easy and quick. My kind of recipe!

Faith's Meatloaf

  • 2 pounds ground beef
  • 2 eggs
  • 1-1/2 cups seasoned bread crumbs
  • 1/2 cup ketchup
  • 1 teaspoon Lawry's Seasoned salt
  • 1/4 warm water
  • 1 package dry onion soup mix

Preheat oven to 350 degrees.

Mix all ingredients except ground beef, blending well. Add in ground beef. Form into loaf pan and bake uncovered for one hour.

Drain well and allow meatloaf to sit for 10 - 15 minutes before slicing.

Serve with your favorite sides and enjoy!

The Marine I fell in love with!!!

I married into a family of military men. Mark's dad served in the navy on a submarine during WWII and was fortunate enough to make it out alive. Mark's brother also served in the Navy during the Vietnam War.

My husband, Mark, decided to join the United States Marine Corps after he graduated from high school. He was an excellent trombone player, so naturally they put him in the band while he was stationed in New Orleans. He was off to boot camp first in San Diego and then to Norfolk, Virginia for basic training.

Mark was in the Marine Corps during peaceful times, so the band he was with traveled the country playing for generals and dignitaries. They performed at various ceremonies and parades. Typically, during wartime the bands would stand guard at U.S. Embassies around the world. It was during that time that Mark showed an interest in repairing band instruments and later made it his career.

I met Mark right after he finished his four-year tour. I was interested in Mark from the first moment I met him in church. Since he was already out of the Marines by the time we met, I didn't get the chance to see him in his uniform for several months.

One evening the doorbell rang at my parent's house and there stood Mark in full dress blues!! It was at that very moment I thought to myself, "I have to marry this man!" We were engaged shortly thereafter and married six months later.  Even to this day, I am so disappointed we didn't think to take any pictures of the two of us that night Mark knocked on my door in his uniform!!

Our plan for our wedding was to have several of Mark's Marine buddies in their dress blues hold swords crisscrossed over us as we walked through. It's the one reason that our groomsmen were dressed in blue tuxedos. It was a good plan on our end, but just four days before our wedding, they were called to duty. Unfortunately, they didn't make our wedding at all. That's the life of a serviceman or woman. Plans can change suddenly when they have to answer the call of duty and their families sacrifice as well. May God bless them all!

They say, "Once a marine, always a marine." That really is true! Even after 31 years of marriage, Mark is so proud to say he was in the Marine Corps. He has a big plaque that hangs on our wall, Semper Fi, which means: "always faithful" to the United States Marine Corps. And on this day, I say a big happy 239th birthday to the United States Marina Corps and God bless!

Mary Beth's Menu - Souper Burgers

Souper Burgers

  • 1 pound ground beef
  • 1 egg, beaten
  • 1/3 cup dry bread crumbs
  • 1 can cream of mushroom soup
  • French fried onions

Combine ground beef, egg and bread crumbs. Shape into 4 patties and cook thoroughly on medium heat in a skillet. Drain excess fat. Spoon soup over cooked burgers, cover and simmer on low to medium heat for 20 minutes.

Top with french fried onions and serve on your favorite bun.

Experiment! This time I added swiss cheese and it was delicious. Add bacon, lettuce or tomatoes .... personalize them any way you like.

TV and me spanning over 30 years!

I had been interested in working in TV while in high school but never thought it was anything more than just a dream. I was just a small town girl from the Midwest, not a big city girl from a metropolis!But while I was a senior in college, I got the opportunity to do an internship at the NBC news station in Minneapolis, and I loved it!

By the time I graduated high school, I had an audition video ready to send out for a potential news job. Within two weeks, I was hired to be the first female evening news anchor in Eau Claire, WI. It was a great place for me to start and get my feet wet while really learning the business. That was 1981 when a lot of cities still only had male news anchors behind the desk. So it was rather groundbreaking back then. I was there 3 years and only left to get married to Mark.

After getting married, we lived in Canada for a few years for Mark's job, and I had to take a break from working. When we moved back to the US, I landed a job right away for the shopping channel in Minneapolis, CVN, Cable Value Network, which was just getting started in 1987. I was getting back into TV, but in a very different genre than news. There was no training, so I feel rather self-taught. There was one very lovely lady on the host team, Carmela Richards, who took me under her wing and taught me so much.

I fell in love with the shopping business, but 3 years into it, QVC purchased CVN and asked me to transfer out to PA to be on QVC. Mark and I decided to give it a try, and that was in March 1990. And I have loved every moment of it!

I am so grateful that God has it in His plan for my life to be at QVC, because it has been a dream come true!

I love to shop, and I get to be a part of that day after day!  Thanks for being a part of my dream by watching QVC! I am so blessed!

Feeling Blessed on National Adoption Day!

Adopting a child is something you do with great excitement and overwhelming fear and hesitation not knowing what lies ahead, but isn't that true with any of our children? But the attitude with which you adopt is critical. If your overall thought is to do it for yourself and what you will get from it, you may be disappointed, because reality can be very different from imagination. However, if you adopt because you truly want to save a child from its circumstances and allow that child to come in to your heart and your home, then you're on the right track. Ultimately, you are saving a child but receiving countless numbers of blessings along the way.

These are the two oldest boys waiting for the plane when we brought Elizabeth home. They were excited about a baby sister, but they were determined to have blue balloons!

Honestly, when we adopted our daughter, it was because we wanted to add a girl to the three boys we already had. When I think back about it, it was about us and what we wanted, but we also felt God was nudging us in that direction.

Ryan was only 3, so he didn't meet us at the airport, but Eric and Cory did!

After being an adoptive parent for about 16 years, we've done a 180! It's not about us at all. It's about what we can give this wonderful girl (young woman) of ours that she wouldn't otherwise have had, and I'm not talking about material things. I mean unconditional love and acceptance, self-worth and self-esteem, a sense of belonging, a trust that squelches fear, a confidence that she matters, that God created her for a purpose, and He has a plan for her life.

I've always said that God knows exactly which kids belong in which families, and I still believe that. All we asked for was a newborn female. We received a precious girl who looks just like us and fits into our family like the missing piece of a puzzle that with her makes it complete.

We learn as much from her as she learns from us. We are better people because of what she has brought into our family. It's not always easy. There are things in an adopted child's DNA that you don't understand. Especially if it is a closed adoption, you may know nothing about the birth parents, so there's a bit of a guessing game. But like everything else in life, you work through it and walk by faith one step at a time. As we all know, the rough patches in the road bring about the best lessons learned and the biggest blessings.

Elizabeth has become such an integral part of our lives that sometimes I forget she is adopted.I feel like I gave birth to her just like I did with the boys. When I look back at the pictures of Elizabeth growing up, I can't believe how blessed we have been, and it's humbling to wonder why God chose us to be her family.

Her daddy, Mark, is so in love with his baby girl that he would go to the ends of the earth for her. It's amazing how the family cord binds people together tighter than anything else.

She has a beautiful smile, long legs I never had, a giving heart for the underdogs in life and a special relationship with horses that I never imagined! Our sons love and adore her, try to protect her and always want the very best for her.

Her name, Elizabeth, is taken from Mark's mother's middle name and my middle name.  And it definitely didn't take long to decide on her middle name, Grace. "Grace" is a gift from God that we don't deserve, and that said it all!

Mary Beth's Menu - Lemon Cake

Lemon Cake

  • 1 box lemon cake mix
  • 1 package instant lemon pudding
  • 3/4 cup water
  • 3/4 cup vegetable oil
  • 4 eggs
  • 1/2 cup lemon juice OR 1/2 cup orange juice
  • 2 cups powdered sugar

Pre heat oven to 325 degrees.

Combine lemon cake mix, pudding mix, water and oil. Beat with a hand mixer for 5 minutes. Add eggs one at a time beating an additional 5 minutes.

Pour batter into a greased and lightly floured "9 x 13" baking pan.

Remove from oven and pierce holes on top of cake with a fork.

Mix the fruit juice and powdered sugar. Pour over warm cake.

Enjoy with a glass of milk or hot tea!

Mary Beth's Menu - Caramel Apple Dip

Caramel Apple Dip

  • 1 cup brown sugar
  • 1 block of cream cheese
  • 1 container of caramel apple dip
  • 1/2 bag of toffee bits
  • 1/2 bag of mini chocolate chips
  • Several apples of your choice. My favorite our the Honey Crisps

With a hand mixer, mix the brown sugar with the cream cheese and spread in the bottom of a shallow dish at least as large as a pie plate or larger. Microwave the caramel apple dip just to soften it up but not too warm. Pour it over the bottom layer. Then sprinkle the toffee bits and chocolate chip bits over the top. Slice up the apples and dip away!

Refrigerate any leftovers.

Mary Beth goes to the "bar"

You wouldn't expect to see me in a bar, but my social media partner and friend, Erika, and I took a day trip to the Big Apple a few weeks ago to visit the Drybar.

At Penn Station in NYC; we have arrived!

What is a Dry Bar? It is a salon that specializes in, and only offers blow outs after they shampoo your hair. Not cuts, no color, just a wonderful blow out with a fabulous style of your choice. And all of the styles have cute "bar" and "drink" names. I do not drink, but this type of bar is right up my alley, beauty alley!! : )

I chose a combination of the Manhattan and the Southern Comfort, because I prefer more volume than curl.

We learned all about our Today's Special Value and not only was it fun, but educational as well.

Meet "Buttercup"!Buttercup is the mascot of the Drybar and our Today's Special Value. Ali, the founder of Drybar said "Buttercup" was often referred to as "that upside down yellow blow dryer", so she decided to give it a name and a permanent home. And, I'm so glad she did!

To my dear friend, Lisa Robertson

We have gone to two funerals and a wedding together in less than one year.  Those experiences bring friends even closer! I'm talking about Lisa Robertson and me.

It is with mixed emotions that we say goodbye to Lisa at the Q. We will definitely miss her, but she has worked tirelessly day and night, day after day for years, and does she deserve a little 'me' time? Absolutely!!! She has poured her heart and soul into the Q, as well as blood, sweat, and tears for 20 years and has put up with sore feet, meals on the rush, very little sleep, long 14 hour days sometimes, and no time for much of a social life!

Lisa deserves to sleep in, have lunch with friends, go on a date on a Friday night, and just put her feet up when she wants to! When she announced she was leaving, I told her to just focus on herself for a few months. Even though I admire her tenacity and ambition and hard work ethic, life is short, and it's okay to take a break. It's also okay to change directions if you are so led.

Lisa is multi-talented, so smart, so beautiful, so funny and I have no doubt she will dive into exciting work again, but in the meantime, she deserves to focus on home, family and friends.

I've known Lisa for 20 years, and she has been a true blessing in my life! She has a generous heart and she truly cares for others. I love her and will miss her, but I know we will be friends for life!

God bless you, Lisa! I can't wait to see what God has set aside for your future!
